I love this bread because it is incredibly fruity and fragrant but also very different. Strawberry and basil isn’t necessarily a combination you would think to put together all the time but it works and it actually works really really well. I think those two ingredients specifically bring out the best flavors in each other.
As mentioned above, all of the ingredients come together to made a beautiful combination in this bread. The fresh flavors of lemon (in the glaze) fresh strawberries, and fragrant basil are a delight to the senses.
Preparing to make Strawberry Basil Bread with Lemon Glaze
As with many sweet breads, it comes together in a matter of minutes. If you complete any prep work beforehand, it will make the process even smoother. Chop your strawberries, herbs, and make the glaze beforehand. Additionally, a pro tip for making anything involved with eggs is to make sure you crack them in a separate bowl. This will allow you to remove any shells that may try to sneak their way in this essentially, ruining what you’ve created.
Putting it all together
Once all of the ingredients have been prepared, all there is left to do is to blend everything together with an electric mixer. Creaming the butter and sugar together first is key for the fluffiness of the bread. Another great tip is to add all of the other dry ingredients together in a separate bowl and give them a good mix (I like to do this with a fork and I find it works very well.)

Finally, make sure your oven is preheated!! This is a step I sometimes forget to do ( I usually set reminders before I begin to help me remember!! Be sure to give your loaf pan a coating of butter and flor so the bread doesn’t stick to the pan. Once your bread has finished baking, let it cool completely before glazing.Print
Strawberry Basil Bread with Lemon Glaze is sweet and fragrant with a tangy lemon glaze.
For the bread:
1 cup plus 1/3 cup strawberries, cut into small pieces
4 tablespoons basil, chopped
1 ½ cups all-purpose flour
1 tsp baking powder
1/8 tsp baking soda
¼ tsp salt
½ cup white sugar
½ cup brown sugar
½ cup butter, room temperature
¼ cup vanilla almond milk creamer (or almond milk)
½ tsp vanilla extract
For the glaze:
1 cup confectioners sugar
3 teaspoons lemon juice
1.Cream together butter and sugar in an electric mixer on medium speed.
2. Slowly add eggs, one at a time, mixing at a low speed.
3. Carefully add in creamer and vanilla extract, continue to mix at a low speed.
4. Add in the dry ingredients, very slowly so that it doesn’t blow out of the bowl; this includes the flour, salt, baking powder and baking soda.
5. In a separate bowl, peel and mash bananas. Add the basil and strawberries; mix in gently.
6. Add this mixture to a pan that’s already been coated with flour and butter to prevent the bread from sticking to the pan.
7. Bake at 375 degrees for 50-60 minutes or until a for comes out clean.
To make the glaze:
Sift confectioners sugar into a bowl. Add lemon juice, whisking until smooth
