Make it from scratch if you can
Now…I made each of the elements inside this dip by hand and that DEFINITELY makes a difference and adds to the whole experience of this dip but a very similar result can be achieved by using store-bought or partially store-bought ingredients. For example, you can use hummus from the store, make your own, or buy the tahini and still make your own hummus (tahini is an ingredient in hummus).
A note about the veggies
Since this is a dip, be sure to cut up the cucumber and tomato very small…there’s no need to mince, just make sure they’ll fit well on your cracker or chip of choice.
Making hummus and tahini
I would absolutely love to learn how hummus is made traditionally…it can be a bit tricky for me if I’m honest. Getting the right consistency takes a bit of patience and the right technique….I’ve yet to master this fully. If you choose to make your tahini, just know that you will need a high powered food processor. I actually had to try it with a few different devices to get the consistency I was looking for…tahini comes in many different textures so don’t worry if yours comes out thick like mine did.
Whipped Feta is delicious
Whipped Feta lies atop the hummus… it’s really fun to make, I love watching the texture morph before my eyes and it is so so versatile!! Typically made with cream cheese, I decided to play up the theme here and make it with Greek Yogurt.
Mediterranean Inspired Layer Dip is a fresh mix of hummus, whipped feta, and a cucumber tomato-herb salad.
½ cup cucumber, chopped tiny
½ cup tomato, chopped tiny
juice from half a lemon
2 sprigs oregano, chopped
a small handful of fresh basil, chopped
2 sprigs of parsley, chopped
For the Tahini:
½ cup hulled sesame seeds, toasted
4 tablespoons avocado oil
5 tablespoons water
pinch of salt (optional)
(makes ½ cup)
For the Hummus:
½ cup tahini
1 ½ cups chickpeas
½ teaspoon cumin
¾ teaspoon salt
¼ teaspoon pepper
2 roasted garlic cloves
2 tbsp olive oil
For the Whipped Feta:
1 (8oz) block Feta cheese
¾ cup Greek yogurt
- Make tahini-toast sesame seeds, pulse in a food processor and add olive oil and water, blending until smooth.
- Make Hummus-add chickpeas to a food processor and pulse. Add cumin, salt, pepper, tahini, roasted garlic, and olive oil; blend until smooth.
- Make Whipped Feta-add Feta block to a food processor and pulse until pieces break down. Add Greek Yogurt, scrape down sides and blend until smooth.
- Chop vegetables and herbs. Add them to a bowl, squeeze lemon and stir. Assemble dip-Add hummus to a dish, place whipped feta on top and swirl it in with a spoon. Top with cucumber tomato mixture.
If you wish to cut down on time, you can use store-bought tahini to make your hummus. Alternatively, you can use store-bought hummus (which is usually made with Tahini) and make your own whipped Feta!
